Well, ripping out the creatures you need should be easy.
Just open the hak, export the resources, look in the appearance.2da to find what creatures you are interested in. Delete all the other custom lines. Now renumber the lines, find the model names on the lines. Keep the models *.mdl you need, delete the rest.
Save up the 2da file, add it all to a hak and use it.

Too be honest, these hak packs are a little large. If I add them to my exisiting hak it is just going to get too large. I would have been more likely to have used it if it only contain half a dozen creatures and was only a 50th of the size.
I ended up just using the vaguely suitable couple of creature already in the toolset.
