Amen! I was just thinking about this... like, many things have been improved between NWN1 and NWN2, but I think the animations are much less interesting to look at. I don't have the ability to do this myself, but I would love to see someone create all kinds of new animations, as well as override versions of current ones. Something like Ragnarok did with combat animations.
